My Grandma loves to make this Tuna Salad with Ramen Noodles and Canned Jalapeños! I can’t wait to hear what you all think of this family recipe!
Ingredients:
- 1 can of tuna, drained
- 1 stalk of celery, finely chopped
- 1 carrot, diced
- 1 potato, boiled and diced
- 1/4 cup onion, finely chopped
- 1 cup cherry tomatoes, halved
- 2 cups lettuce, chopped
- Kernels from 1 ear of fresh corn (about 1/2 cup)
- 1/2 cup plain Greek yogurt (as a healthier alternative to mayonnaise)
- 1/4 cup light sour cream or a light cream alternative
- 1/4 cup canned jalapeños, chopped (adjust to taste)
- 1/4 cup radishes, thinly sliced
- 1 avocado, diced
- 1 cup cooked ramen noodles, cooled and drained
- Salt to taste
- Optional: Serrano peppers for extra heat
Instructions:
- In a large bowl, combine the drained tuna, chopped celery, diced carrot, boiled and diced potato, and finely chopped onion.
- Add the halved cherry tomatoes, chopped lettuce, and corn kernels.
- Mix in the plain Greek yogurt and light sour cream.
- Stir in the chopped canned jalapeños and sliced radishes.
- Gently fold in the diced avocado and cooled ramen noodles.
- Season with salt to taste.
- Optional: Add serrano peppers for extra heat.
Serve with saltines or in a sandwich!
