Mulberry Salad with Red Onion, Avocado, Almonds, and Goat Cheese

This Mulberry said is light, fresh, and perfect!

We recommend using Himalayan mulberries like we did fresh from Habitera Farms in Brentwood, California.

Ingredients:

  • 1 cup fresh mulberries
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup goat cheese, crumbled
  • Mixed greens (e.g., arugula, spinach, or a spring mix)
  • Salt and pepper to taste

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste.
  2. Assemble the Salad:
    • In a large salad bowl, add the mixed greens.
    • Scatter the mulberries, red onion slices, avocado, almonds, and goat cheese over the greens.
  3. Dress the Salad:
    • Drizzle the dressing over the salad and gently toss to combine, ensuring all ingredients are evenly coated.
  4. Serve:
    • Divide the salad onto plates and enjoy immediately.
