This Mulberry said is light, fresh, and perfect!
We recommend using Himalayan mulberries like we did fresh from Habitera Farms in Brentwood, California.
Ingredients:
- 1 cup fresh mulberries
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup sliced almonds, toasted
- 1/4 cup goat cheese, crumbled
- Mixed greens (e.g., arugula, spinach, or a spring mix)
- Salt and pepper to taste
Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well combined. Adjust seasoning to taste.
- Assemble the Salad:
- In a large salad bowl, add the mixed greens.
- Scatter the mulberries, red onion slices, avocado, almonds, and goat cheese over the greens.
- Dress the Salad:
- Drizzle the dressing over the salad and gently toss to combine, ensuring all ingredients are evenly coated.
- Serve:
- Divide the salad onto plates and enjoy immediately.
